Easy Tofu Cream Cheese

A healthy bagel spread rich in protein and cholesterol lowering tofu.

Equipment

  • 1 Blender

Ingredients
  

  • ½ block firm tofu
  • 2 tbsp lemon juice
  • 2 tbsp tahini
  • 2 tbsp nutritional yeast
  • 1 tbsp extra virgin olive oil
  • tsp salt
  • ¼ cup coarsely chopped mixed fresh herbs (i.e. parsley, etc)

Instructions
 

  • Remove the tofu from the package and drain the excess liquid. Use a fork to crumble the tofu to blend it easier.
  • Add tofu, lemon juice, olive oil, tahini, nutritional yeast, and salt to a blender. Blend until you have a smooth tofu cream texture.
  • Add in the chopped fresh herbs and mix well.
  • Serve as a spread on bread, bagels, sandwiches, or serve as a dip. Pair it with your vegetables or fruits of choice.
