Easy Tofu Cream Cheese
A healthy bagel spread rich in protein and cholesterol lowering tofu.

- ½ block firm tofu
- 2 tbsp lemon juice
- 2 tbsp tahini
- 2 tbsp nutritional yeast
- 1 tbsp extra virgin olive oil
- ⅛ tsp salt
- ¼ cup coarsely chopped mixed fresh herbs (i.e. parsley, etc)
Remove the tofu from the package and drain the excess liquid. Use a fork to crumble the tofu to blend it easier.
Add tofu, lemon juice, olive oil, tahini, nutritional yeast, and salt to a blender. Blend until you have a smooth tofu cream texture.
Add in the chopped fresh herbs and mix well.
Serve as a spread on bread, bagels, sandwiches, or serve as a dip. Pair it with your vegetables or fruits of choice.
