Ingredients
  

Wet Ingredients

  • 1 medium ripe banana
  • 2 eggs
  • 1 tsp vanilla
  • cup almond butter
  • 2 tbsp maple syrup
  • ¾ cup unsweetened soy milk

Dry Ingredients

  • 2 cups rolled oats
  • 1 tsp baking powder
  • ½ tsp cinnamon
  • ¼ cup semi-sweet chocolate chips

Instructions
 

  • Preheat oven to 350F. Line an 8x8 square baking dish with parchment paper, or lightly grease with olive oil.
  • In a medium bowl, mash one ripe banana. Add remaining wet ingredients: eggs, vanilla, maple syrup, almond butter, and almond or soy milk. Mix with a whisk until combined.
  • Add dry ingredients: rolled oats, baking powder, cinnamon, chocolate chips and mix until combined.
  • Pour your oat mixture into the prepared baking dish and spread until even. Top with additional chocolate chips if desired.
  • Place in the oven, and bake for 25-30 minutes, until a toothpick or knife comes out clean.
  • Allow to cool for at least 15 minutes, cut into roughly 6 squares.
  • Top with your favorite nut butter or enjoy with Greek yogurt and berries if desired!
