Wet Ingredients
- 2 bananas mashed, overripe
- 1/2 avocado mashed
- 1 egg
- 3/4 cup ricotta cheese reduced fat, low sodium
Dry Ingredients
- 2 cups whole wheat flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 cup sugar
- 1/4 tsp cinnamon
- 1/8 tsp nutmeg
- 1 cup walnuts chopped, optional
- 1/3 cup hemp hearts optional
Preheat oven to 350°F(175°C). Line loaf pan with parchment paper.
In a large bowl, mash the banana and avocado with a fork until smooth.
Beat in egg and ricotta until well incorporated.
In a separate large bowl, combine flour, baking soda, baking powder, sugar, cinnamon, nutmeg and optional hemp hearts, and walnuts. Combine well.
Add wet ingredients to dry ingredients and mix until all ingredients are well incorporated. Try not to overmix.
Transfer batter into loaf pan, ensuring the batter is even in the pan and the top is level.
Bake for 50 minutes to 1 hour, or until a toothpick inserted into the center of the loaf comes clean.
Let cool for 10 minutes. Remove from loaf pan and transfer to a cooling rack until completely cooled. Slice and enjoy!
