Banana Ricotta Bread

Ingredients
  

Wet Ingredients

  • 2 bananas mashed, overripe
  • 1/2 avocado mashed
  • 1 egg
  • 3/4 cup ricotta cheese reduced fat, low sodium

Dry Ingredients

  • 2 cups whole wheat flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 cup sugar
  • 1/4 tsp cinnamon
  • 1/8 tsp nutmeg
  • 1 cup walnuts chopped, optional
  • 1/3 cup hemp hearts optional

Instructions
 

  • Preheat oven to 350°F(175°C). Line loaf pan with parchment paper.
  • In a large bowl, mash the banana and avocado with a fork until smooth.
  • Beat in egg and ricotta until well incorporated.
  • In a separate large bowl, combine flour, baking soda, baking powder, sugar, cinnamon, nutmeg and optional hemp hearts, and walnuts. Combine well.
  • Add wet ingredients to dry ingredients and mix until all ingredients are well incorporated. Try not to overmix.
  • Transfer batter into loaf pan, ensuring the batter is even in the pan and the top is level.
  • Bake for 50 minutes to 1 hour, or until a toothpick inserted into the center of the loaf comes clean.
  • Let cool for 10 minutes. Remove from loaf pan and transfer to a cooling rack until completely cooled. Slice and enjoy!
