Banana Ricotta Muffins

Ingredients
  

  • 2 cups all purpose flour
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 3/4 cup white sugar
  • 3/4 cup olive oil
  • 2 eggs
  • 1 1/2 tsp vanilla extract
  • 1/2 cup ricotta part skim
  • 1/2 cup skim milk
  • 1 banana ripe, mashed
  • 1/2 cup dark chocolate chips

Instructions
 

  • Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it well.
  • In a large bowl, whisk together the flour, baking powder, and cinnamon.
  • In another bowl, beat the sugar and oil until well combined. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract. Mix in the mashed banana and ricotta cheese until smooth.
  • Gradually add the dry ingredients to the wet, alternating with the milk, and stir until just combined.
  • Spoon the batter into the muffin tin, filling each cup about 3/4 full.
  • Bake for 30-35 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  • Let the muffins cool in the pan for a few minutes, then transfer to a wire rack to cool completely.
