Equipment

  • 1 bowl
  • 1 loaf pan

Ingredients

Dry Ingredients

  • 1 1/4 cups all purpose flour
  • 1 cup old fashioned oats reserve 2 tbsp for the top
  • 3 tbsp ground flaxseed
  • 2 tsp baking powder
  • 1/4 tsp baking soda
  • 2 tsp cinnamon
  • 1 tsp ginger
  • 1/2 tsp nutmeg

Wet

  • 1 cup pumpkin puree
  • 2 large eggs
  • 1/2 cup extra virgin olive oil
  • 1/2 cup maple syrup
  • 1 tsp vanilla
  • 1/3 cup walnuts

Instructions

  • Heat the oven to 350°F and line a 9 x 5 inch loaf pan.
  • Whisk the dry ingredients together in a large bowl. In a second bowl, whisk the wet ingredients until smooth.
  • Pour the wet ingredients into the dry and stir until just combined, then fold in the walnuts.
  • The batter will be thick. Let the batter rest for 10 minutes so the oats and flax can soften.
  • Pour the batter into the pan and sprinkle a few oats over the top.
  • Bake for 50 to 60 minutes, until a toothpick in the center comes out clean.
  • Cool in the pan for 10 minutes before turning it out onto a rack, so it doesn't break.
