Stir in onion, garlic, and herbes de provence and cook for around 5 minutes or until they turn golden.
Add the barley, tomatoes, broth and beans to the pot and stir until the soup comes to a boil. Lower the heat to medium, simmer the barley for approximately 15-20 minutes until cooked.
Add the spinach and simmer for approximately one minute.
