  • 1 Mason Jar
  • 1 salad bowl

Ingredients
  

For the salad

  • 4 cups arugula
  • 2 pears thinly sliced
  • 1/2 cup sunflower seeds
  • 1/4 cup goat cheese crumbled
  • 1/4 cup dried cranberries

For the Low Sodium Salad Dressing

  • 3 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp Dijon mustard
  • 2 tbsp white sugar
  • 1 small garlic clove finely minced

Instructions
 

  • Whisk together the vinaigrette ingredients in a small jar until emulsified. Let sit for a few minutes to mellow the garlic.
  • In a large salad bowl, combine arugula, pears, toasted nuts, goat cheese and dried cranberries.
  • Drizzle with vinaigrette and toss gently to coat.
  • Serve immediately and store extra in the fridge for 3 days.
