- 2 lbs PEI mussels
- 3 tsp extra virgin olive oil
- 3 cloves garlic minced
- 1 small white onion
- 2 cups white wine
- 1 lemon zested and juiced
- 1 bunch parsley chopped
Heat olive oil in large sauté pan, add garlic and onions. Sauté until fragrant.
Add wine and lemon juice, bring to a simmer.
Add mussels that remain closed
Squeeze lemon juice over top, sprinkle with zest and parsely.
