Ingredients
  

  • 2 lbs PEI mussels
  • 3 tsp extra virgin olive oil
  • 3 cloves garlic minced
  • 1 small white onion
  • 2 cups white wine
  • 1 lemon zested and juiced
  • 1 bunch parsley chopped

Instructions
 

  • Heat olive oil in large sauté pan, add garlic and onions. Sauté until fragrant.
  • Add wine and lemon juice, bring to a simmer.
  • Add mussels that remain closed
  • Squeeze lemon juice over top, sprinkle with zest and parsely.
