Easy Moroccan Chicken with Prunes and Olives

4 chicken breast 2 tbsp extra virgin olive oil 1 medium yellow onion sliced 1 tsp cinnamon 1/2 tsp nutmeg 2 cups low sodium chicken broth 1 cup California prunes pitted and halved 1/2 cup green olives with garlic cloves 1 lemon juiced and zested 1 bunch fresh parsely optional
Place olive oil in pressure cooker and sear, brown all sides of chicken breast. Remove chicken and set aside.
Add the onions and sauté to tender around 10 minutes.
Add spices, chicken broth, prunes, olives, lemon zest and juice, along with parsely.
Add the chicken back to pot and set pressure cooker on high for 20 minutes. Manually release steam.
Serve with the sauce and fresh parsley.
