Easy Moroccan Chicken with Prunes and Olives

  • 1 Pressure Cooker

Ingredients
  

  • 4 chicken breast
  • 2 tbsp extra virgin olive oil
  • 1 medium yellow onion sliced
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 2 cups low sodium chicken broth
  • 1 cup California prunes pitted and halved
  • 1/2 cup green olives with garlic cloves
  • 1 lemon juiced and zested
  • 1 bunch fresh parsely optional

Instructions
 

  • Place olive oil in pressure cooker and sear, brown all sides of chicken breast. Remove chicken and set aside.
  • Add the onions and sauté to tender around 10 minutes.
  • Add spices, chicken broth, prunes, olives, lemon zest and juice, along with parsely.
  • Add the chicken back to pot and set pressure cooker on high for 20 minutes. Manually release steam.
  • Serve with the sauce and fresh parsley.
