I first fell in love with Moroccan flavours while experimenting with sweet and savoury combinations during my dietetic training. I remember trying a tagine for the first time and being surprised by how comforting and balanced it was. It was slightly sweet from the fruit, aromatic from the spices, and perfectly tender chicken.

Fast forward to today, and this pressure cooker version has become one of my weeknight go-tos. It brings back those same cozy flavours, but in a fraction of the time. Perfect for busy evenings (because I have lots of those!) when I still want something nourishing and a little special.
