Dry Ingredients 1 cup all purpose flour 1 cup quick oats 1/4 cup hemp seeds 1 tsp cinnamon 1 tsp baking powder 1/2 tsp salt Wet Ingredients 2 eggs 1/2 cup plain non fat Greek Yogurt 1/2 cup unsweetened soy milk 1 cup chopped dates (about 10 Medjool dates, pitted and chopped) 1 cup wild blueberries
Preheat oven to 350 F. Line the 12 cup muffin tin
In a large bowl, whisk together all dry ingredients
In a smaller bowl, whisk together eggs, yogurt, vanilla, soy milk and chopped dates
Gently fold the dry ingredients into the wet mixture
Carefully fold in the wild blueberries
Divide the batter evenly among 12 muffin cups
Bake for 18-22 minutes, or until toothpick comes out clean
