These heart-healthy blueberry muffins are packed with fiber, omega-3s, and antioxidants thanks to oats, flax, hemp seeds, dates, and blueberries. Naturally sweetened with chopped dates and boosted with protein from Greek yogurt and eggs, they make a nourishing snack or breakfast you can feel great about.

  • 1 Muffin Tin

Ingredients
  

Dry Ingredients

  • 1 cup all purpose flour
  • 1 cup quick oats
  • 1/4 cup hemp seeds
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1/2 tsp salt

Wet Ingredients

  • 2 eggs
  • 1/2 cup plain non fat Greek Yogurt
  • 1/2 cup unsweetened soy milk
  • 1 cup chopped dates (about 10 Medjool dates, pitted and chopped)
  • 1 cup wild blueberries

Instructions
 

  • Preheat oven to 350 F. Line the 12 cup muffin tin
  • In a large bowl, whisk together all dry ingredients
  • In a smaller bowl, whisk together eggs, yogurt, vanilla, soy milk and chopped dates
  • Gently fold the dry ingredients into the wet mixture
  • Carefully fold in the wild blueberries
  • Divide the batter evenly among 12 muffin cups
  • Bake for 18-22 minutes, or until toothpick comes out clean
  • Let cool before serving. Enjoy!
