These heart-healthy blueberry muffins are packed with fiber, omega-3s, and antioxidants thanks to oats, flax, hemp seeds, dates, and blueberries. - 1 Muffin Tin
Ingredients
Dry Ingredients
- 1 cup all purpose flour
- 1 cup quick oats
- 1/4 cup hemp seeds
- 1 tsp cinnamon
- 1 tsp baking powder
- 1/2 tsp salt
Wet Ingredients
- 2 eggs
- 1/2 cup plain non fat Greek Yogurt
- 1/2 cup unsweetened soy milk
- 1 cup chopped dates (about 10 Medjool dates, pitted and chopped)
- 1 cup wild blueberries
Instructions
- Preheat oven to 350 F. Line the 12 cup muffin tin
- In a large bowl, whisk together all dry ingredients
- In a smaller bowl, whisk together eggs, yogurt, vanilla, soy milk and chopped dates
- Gently fold the dry ingredients into the wet mixture
- Carefully fold in the wild blueberries
- Divide the batter evenly among 12 muffin cups
- Bake for 18-22 minutes, or until toothpick comes out clean
- Let cool before serving. Enjoy!
