Zucchini Cake Recipe:


  • Chocolate Cake Mix
  • 2 eggs (or use flax eggs, by using 2 tbsp of flaxseed meal and 5 Tbsp of water)
  • 2 Zucchini
  • 1 Tbsp of water


  • 1. Grate one or two zucchinis using a hand grater until you have 2 cups of shredded zucchini.
  • 2. In a mixing bowl, combine the chocolate cake mix, eggs (or flax eggs), and shredded zucchini. Stir until everything is well mixed. If the batter seems too dry, add a tablespoon of water at a time until it reaches the desired consistency.
  • 3. Pour the chocolate zucchini cake batter into a Bundt pan.
  • 4. Bake at 350 degrees Fahrenheit for about 35 minutes. The cake is ready when a toothpick inserted into the center comes out clean.
  • 5. Allow the cake to cool completely before serving.
