I’ll be honest, I like oatmeal. I recommend oatmeal. I talk about oatmeal all the time. But sometimes I just don’t want another sweet breakfast. That’s exactly why I created this Mediterranean Baked Oatmeal.

  • Stir everything together until evenly combined.
  • Pour the mixture into the baking dish and spread it into an even layer.
  • Bake for about 45 minutes, or until the centre is set and the edges are lightly golden.
  • Let it cool for a few minutes before slicing, then top with fresh basil before serving.

  • 2 cups low sodium vegetable broth
  • 2 large eggs beaten
