I’ll be honest, I like oatmeal. I recommend oatmeal. I talk about oatmeal all the time. But sometimes I just don’t want another sweet breakfast. That’s exactly why I created this Mediterranean Baked Oatmeal.
This savoury baked oatmeal is packed with vegetables, herbs, olives, and feta cheese, making it a hearty make-ahead breakfast that’s completely different from your typical bowl of oats.
Think of it as somewhere between a baked oatmeal and a crustless vegetable frittata.
Why You’ll Love this Mediterranean Baked Oatmeal
Most people think of oats as a sweet food (like this pecan pie overnight oats recipe), but oats are surprisingly versatile.
The mild flavour works well with herbs, vegetables, cheese, and even olives. In this recipe, oregano, basil, sun-dried tomatoes, feta, and Kalamata olives give the oatmeal a Mediterranean inspired flavour that feels a little more exciting than your usual breakfast.
It’s also a great way to use up vegetables that are hanging out in the fridge.
Bell peppers? Toss them in.
Spinach? Perfect.
A handful of leftover herbs? Go for it.
This recipe is very forgiving while easily following heart healthy diets like the Portfolio diet, DASH diet and Mediterranean diet plans.
Why Oats Are Great For Heart Health
As a heart health dietitian, oats are one of my favourite breakfast ingredients.
Oats contain a type of soluble fibre called beta-glucan, which can help lower LDL (“bad”) cholesterol levels as part of an overall heart-healthy eating pattern. Eating enough soluble fibre is an important part of the Portfolio diet.
They also provide fibre that helps support fullness and stable energy throughout the morning.
When paired with vegetables, eggs, and feta cheese, you get a balanced breakfast that contains:
• Fibre-rich carbohydrates
• Protein
• Healthy fats
• Vegetables
In other words, the kind of breakfast that helps you avoid the 10 a.m. snack hunt and is perfect addition to your Portfolio diet recipes.
How To Make Savory Oatmeal with Vegetables
One of my favourite things about this recipe is that everything gets mixed together in one bowl.
Preheat your oven to 375°F and lightly grease an 8 x 8-inch baking dish.
- In a large bowl, combine the oats, vegetable broth, eggs, baking powder, oregano, basil, sun-dried tomatoes, bell pepper, spinach, olives, and feta cheese.
- Stir everything together until evenly combined.
- Pour the mixture into the baking dish and spread it into an even layer.
- Bake for about 45 minutes, or until the centre is set and the edges are lightly golden.
- Let it cool for a few minutes before slicing, then top with fresh basil before serving.
That’s it. No stovetop, no flipping, no hovering over a frying pan.
Why This Mediterranean Baked Oatmeal is Perfect For Meal Prep
This baked oatmeal is one of those recipes that actually tastes good as leftovers.
Make it on Sunday and keep slices in the refrigerator for quick breakfasts throughout the week.
You can:
• Reheat it in the microwave
• Warm it in the oven
• Or eat it cold straight from the fridge (no judgement here!)
Tips & Swaps
- Want more protein? Add an extra egg or serve with Greek yogurt on the side.
- Not an olive fan? Leave them out.
- Want more vegetables? Mushrooms, zucchini, and chopped kale all work well.
- Like a little heat? Add red pepper flakes.
- Prefer a dairy-free option? Use a plant-based feta alternative.
